Moon studierte Medizin an der Universität Duisburg-Essen, wo er früh sein Interesse an computergestützten Methoden für medizinische Abläufe entdeckte. Es folgte die Facharztweiterbildung in Radiologie am Universitätsklinikum Essen; seine Forschung zum Einsatz von Computer-Vision-Verfahren in der bildgebenden Diagnostik führte zur Promotion mit magna cum laude.

Seit 2020 ist er Team Lead für Medizinische Informatik am Institut für Künstliche Intelligenz in der Medizin (IKIM). In dieser Rolle verantwortet er Konzeption und Aufbau einer KI-Infrastruktur, die auf die spezifischen Anforderungen der klinischen Praxis zugeschnitten ist. Seine Arbeit ermöglicht die systematische Entwicklung, Validierung und Bereitstellung von KI-Algorithmen und lenkt deren Translation aus der Grundlagenforschung in robuste, klinisch validierte Abläufe im großen Maßstab. Dabei hat er am Aufbau der Infrastrukturinitiative KITE (KI-Translation Essen) mitgewirkt, über die neue KI-Methoden in großem Umfang in die reale Gesundheitsversorgung integriert werden können.
